4-Ingredient Strawberry + Cucumber Lemon Salad

This simple, quick, and delicious salad from Heather Caplan, registered dietitian, is the perfect summer meal. 

This simple strawberry salad contains a mere four ingredients and can easily be made on the fly or in bulk for fridge-keeping and snacking. Even after 9 months in this house it blows my mind that we have a lemon TREE in the backyard, and even though I stare at the little greenish-yellow beauties on the reg, they rarely end up in recipes. This has gotta change. I kept staring at a perfectly ripe lemon from our bedroom window and finally he {got sick of hearing me say ‘that one looks ripe and perfectly yellow!’} reached up and picked it off like,“Show me whatcha got”.

I like to keep things simple and summer-y. I would say this salad should have fresh basil leaves chopped up and tossed in, but I’ve killed so many basil plants in an attempt to home-grow it that I feel like I’ve lost the rights. But if you happen to have fresh basil on-hand, that absolutely should be added here for the best summer flavor burst. Go for it. Make it a 5-ingredient salad!

But for now, it’s only four. And it’s simply delicious.

Ingredients:

  • 1 cup fresh strawberries, chopped (highly recommend market-fresh versions – perfecto!)
  • 2 small cucumbers,  sliced/quartered
  • 1 lemon, squeezed for juice
  • 2 Tbsp sliced almonds
  • Options to add: fresh herbs of choice; chickpeas / white beans, roasted pumpkin seeds, and/or sautéed tofu for protein.

Instructions:

  • Combine chopped strawberries and cucumbers, toss in the freshly squeezed lemon juice, and top with sliced almonds. Simple as that! We munched on this as a side with some grilled salmon – another fave.

One of these days I’ll reconcile my basil-rearing skills, but for now I’ll focus on the lemons.
